I remember dating a guy in my 20’s and we always made these fun wraps. Basically any veggies we could find and saute them up and wrap it with fixins like cheese, ranch, cilantro and avocado, oh not to forget the hot sauce.

! Here’s my variation on that wrap with a California twist.

1 cup organic green lentils
2 cups organic beef broth
2 cups organic mixed vegetables

2 cups grilled cauliflower
1-2 organic avocados
1/2 cup cilantro

optional toppings:


Recipe: prepare the lentils, rinse lentils and prepare to the package directions using beef broth when the lentils are close to done add the frozen (thawed) vegetables and steam, you may need to add 1/2 cup water.

Grill cauliflower and chop, heat tortillas.
add toppings and devour, repeat.


I honestly had the idea of opening a food truck after creating this concoction the other night. I thought, yea, I can bring healthy homemade delicious food everywhere I go and we’ll bring a movie truck too. Sooooo many ideas, so little time.
